The word comes from the French souffler — "to blow" or "to puff up" — which perfectly describes the mechanism. The first documented soufflé recipes appear in cookbooks from the 1742 period. The physics: the base (a thick pastry cream, in this case enriched with chocolate) is mixed with stiffly beaten egg whites. The air bubbles trapped in the beaten whites expand when heated — air expands by about a third when temperature rises from room temperature to oven temperature. Simultaneously, the egg proteins set around these expanded bubbles, creating a temporary rigid structure. When the soufflé is removed from the oven, the air cools and contracts; without the oven heat maintaining the protein structure, the structure collapses. This is not a failure — it is physics.
